After 1 1/2 hours add an egg to this poolish mixture.
1 Egg
Add flour and salt to a mixing bowl and mix.
200 g Flour, 6 g Salt
Add the poolish mixture made earlier to that mixture and mix.
Above mentioned poolish
Add the butter and let it mix
25 g Unsalted Butter
Mix the mixture until it becomes dough.
Place the dough on a floured surface.
Flour for dusting
Cut the dough into 8 equal parts.
Now make the broken dough into balls.
Now place the dough balls in a floured baking tray.
You can use pastry rings if you like. In this case, we place 4 Flour balls in pastry rings and 4 Flour balls as usual. You can customize it in either of these two ways.
Now sprinkle some flour on top of these flour balls.
Cover with a tea towel and leave to bloom for about 1/2 hour.
Now remove the tea towel and place baking paper over it. Place a baking tray on top of the baking paper to prevent the dough from rising during baking.
Bake in a preheated oven at 230 degrees Celsius for 15 minutes.
