Preheat the oven to 180 degrees Celsius. Grease an oven-safe frying pan.
Add olive oil to the saucepan and heat it. After the oil is hot, add the spring onion, courgettes, bell pepper, and thyme and cook for about 2 minutes until the vegetables are soft. Remove from heat and set aside
3 Large Spring onion, 1 Large Courgettes, 1 Medium Red bell pepper, 2 tbsp Olive oil, ½ tsp Thyme
Add tomato and cheese to the pan and mix well.
½ Large Tomato, 120 g Cheddar cheese
Add egg and single cream to another bowl and beat until well combined.
8 Eggs, 125 ml Single cream
Add the mixture to the pre-greased pan.
Bake until light golden color for about 25-30 minutes. Serve hot or cold.
