  • 1 Large Courgettes Summer squash
  • 1 Medium Red bell pepper
  • ½ tsp Thyme dried
  • 2 tbsp Olive oil
  • ½ Large Tomato 
  • 120 g Cheddar cheese 

How to make Healthy Vegetable Frittata?

  • Preheat the oven to 180 degrees Celsius. Grease an oven-safe frying pan.
  • Add olive oil to the saucepan and heat it. After the oil is hot, add the spring onion, courgettes, bell pepper, and thyme and cook for about 2 minutes until the vegetables are soft. Remove from heat and set aside (3 Large Spring onions,1 Large Courgette,1 Medium Red bell pepper,2 tbsp Olive oil,½ tsp Thyme)
  • Add tomato and cheese to the pan and mix well. (½ Large Tomato,120 g Cheddar cheese)
  • Add egg and single cream to another bowl and beat until well combined. (8 Eggs,125 ml Single cream)
  • Add the mixture to the pre-greased pan.
  • Bake until light golden color for about 25-30 minutes. Serve hot or cold.
