What are these Kokis?
It is a sweet food widely used for the tea table during Sri Lankan festivals. Kokis recipe is one of the must-have sweet foods on the New Year’s dinner table, a significant festival in Sri Lanka. Kokis is a crispy food like biscuits. Because of this, children and adults also like these Kokis very much. Raw rice flour is mainly used to make Kokis. What are the ingredients needed to make Kokis Recipe?
Kokis Recipe can be made with 6 main ingredients. Let’s see what those ingredients are
- 500 g Raw rice flour
- 2 cups Thick coconut milk
- 1 Egg
- ½ tsp Turmeric Powder
- 1 tsp Salt
- Oil for frying
Let’s see how to make Kokis Recipe step by step.
- Add the egg to the thick coconut milk and mix well.
- After the egg is well mixed, add salt. Add another egg to this mixture if you like.
- Add turmeric powder to the mixture and mix.
- Add raw rice flour little by little to the coconut milk mixture. Mix well.
- Place a pan on the stove, add oil and let it heat. Place the Kokis mold in the hot oil for about 5 minutes
- Put the Kokis mold into the prepared mixture and add the heated oil. When putting the Kokis mold into the prepared mixture, put 3/4 of the mixture into the mold in such a way that it covers the Kokis mold.
- When the Kokis are fried, when the Kokis start to come out of the Kokis mold, take a stick of oil and remove it from the mold.
- When the Kokis is golden brown, remove them from the pan. Fry all the cookies like this.
There are a few things to keep in mind while making this Kokis recipe. That is
- While making the Kokis, stir the flour mixture every now and then.
- If the flour mixture does not stick to the mold, the mold is too hot. In this case, leave the mold to rest and put it back into the flour mixture.
- Do not immediately remove the floured mold from the oil. Then the shape of Kokis changes. Leave the mold in the oil for about 30 seconds.
- Keep the stove on medium flame.
